Carrot & Berry Oats

Perfect warm winter breakfast recipe!

Time: 10 – 15 mins | Serves: 2

Ingredients

  • 1 cup rolled oats
  • 1 grated carrot
  • 1 handful pumpkin seeds
  • 1 handful sunflower seed kernels
  • 1 handful shredded coconut
  • 1 Tbsp Chia Seeds
  • 1 Tbsp Ground Cinnamon
  • 1/2 cup fresh or frozen berries (chop if large berries)
  • 1 – 2 Tbsp Maple Syrup
  • 2 cup milk
  • 1 tsp vanilla extract

Method

  1. Add all ingredients to a saucepan and mix
  2. simmer on low heat until oats are soft and mixture is a thick consistency (5 – 10 mins). Stir frequently.
  3. Serve with natural yoghurt (optional)
